Wine-grower’s word
" Pomerol designation is the one which stands out from the crowd in 2011. After a hot spring, a cold and humid summer, the sun in September and October saved this Vintage. On one bung we used to find green grapes, some rotten and others perfectly ripe. Ripeness irregularity demanded a severe selection. "

Sommelier’s advice
Recipe suggestions: Meditation wine, to accompanied with a cigar, Navarre Robusto cigar, not very tannic. More classic, with a venison fillet in kadaif (nuts, pistachio) with truffle.
" The first nose presents notes of humid cellar, truffle and a spherical, dense and intense nose. It is a fruity nose, with blackberry, raspberry, morello cherries’ eau de vie, zan and rose wood. It presages a great potential, but still hide a lot of aromas. The fruit is structured, complex, tannic, accompanied with an enchanting floral basis. A bitter dark chocolate note comes in the middle of the mouth. It is a grown wine. The mouth presents a slight alcohol imbalance, but what an intensity and length, on the bitter chocolate! Indisputably the most interesting. "

Œnologist’s advice
" In order to maintain the quality and maximize the work in the cellar the terroir footprint is not systematized. We adapt to each vintage to get the best. The wine is aged for 12 months in oak barrels of which 25% are renewed every year. "
